Restaurant ernst is a fine dining restaurant located in the Berlin district of Wedding, founded by the young chef Dylan Watson-Brawn and his Partner Spencer. After stopovers in Michelin-star restaurants in Japan and the well-known “Noma” in Copenhagen, Dylan has become a well-known face of Berlin gastronomy. The restaurant’s beginnings in earnest can be traced back to the exceptional talent’s home, where he regularly cooked for people from all over the world. From the great response, the idea of opening a 12-seat restaurant was born. An evening in ernst is a constantly changing event, as every evening a different menu sequence will reach the table. Characterized by the availability of local products, the menus im ernst are not only seasonally different, but also daily. A single guest will be served between 28-35 courses, which will reach the table in quick succession. The 12-seats are very much in demand and often booked out for months. The ernst has reinvented itself in 2020. Now no longer 12 but only 8 seats are offered, which are allocated in 2 occupancies in the evening. Now the ernst has become an even more intense and intimate experience, because the focus is again more on the respective individuals

In the restaurant itself, maximum attention is paid to detail. The quick sequence of many small, detailed courses reflects exactly this, whereby mostly only 1-3 ingredients are used. In close cooperation with local producers, only the best and freshest ingredients are put on the table, and since summer 2020 Ernst has even included specially grown products in the menu. Less is sometimes simply more.

In keeping with the discreet presentation, there has been a close collaboration between the restaurant ernst and Studio Cúze since the beginning. The ernst incorporates many different handmade bowls and other pieces from Yasuhiro Cúze into the daily dinner experience.

Currently, Restaurant Ernst is in a process of change and will open its doors again in autumn 2020. First impressions of the new concept have already been gained through the Social-Media channels. In the middle of the lockdown, the serious diagonally across the street has opened Julius, which offers coffee, food, wine and cake.
